Y es que mucho tenemos que agradecerle al huevo.<\/span><\/p><p>Para m\u00ed el huevo es una bendici\u00f3n ca\u00edda del cielo, es un b\u00e1sico, un must sin el cual no podr\u00eda vivir. El huevo es ese ingrediente que siempre hay que tener en la nevera, que nunca te falla, es verdad que alguna vez te juega una mala pasada, pero te saca de muchos m\u00e1s apuros, de los que te mete.<\/p><p>Cu\u00e1ntas veces me habr\u00e1n salvado los huevos\u00a0en esas comidas r\u00e1pidas porque ten\u00eda que salir pitando o cuando no me apetec\u00eda liarme mucho en la cocina, de esas cenas sin preparar, de esas visitas inesperadas\u2026 Y es que con un simple huevo y alguna cosilla m\u00e1s que haya por la nevera, puedes satisfacer a cualquiera preparando\u00a0desde un\u00a0huevo pasado por agua con unas tostadas (me encanta su nombre en ingl\u00e9s, eggs and soldiers), a platos de hasta de un cierto nivel gourmet.<\/p><p>Ya sean de gallina, de perdiz, de codorniz, de pato, de avestruz, blanco, moreno, con manchas, cocido, poch\u00e8, revuelto, estrellado, en tortilla, ya lo usemos para ligar otros ingredientes, para dar volumen, para espesar, para aportar sabor o prote\u00edna a nuestra dieta, no podemos negar\u00a0que el huevo es un ingrediente estrella, primordial para la elaboraci\u00f3n de millones href=\"https:\/\/healthyforkful.com\/es\/shakshuka\/\">Shakshuka<\/a>, esos huevos Florentine, esa tortilla de patatas o esa <a href=\"https:\/\/healthyforkful.com\/es\/tarta-de-cumpleanos-saludable\/\">tarta de cumplea\u00f1os<\/a> brillen con todo su esplendor es que los huevos sean de calidad, que vengan de gallinas felices, criadas en el suelo, en libertad, sin el estr\u00e9s de estar enjauladas con cientos de gallinas, y que son alimentadas con pasto ecol\u00f3gico (sin transg\u00e9nicos ni t\u00f3xicos).<\/p><p>Y es que poneros en su lugar, \u00bfc\u00f3mo producir\u00edais mejor,\u00a0en un ambiente de trabajo relajado o en enjaulado en una lata con cientos de personas a tu alrededor? Ah! Y eso de comer solo tres huevos a la semana se ha quedado desfasado, existen estudios recientes que demuestran que el consumo de huevos no est\u00e1 ligado con el incremento del colesterol.<\/p><p>La clara est\u00e1 formada por agua (un 88%), prote\u00edna (10%) y el resto es grasa, carbohidratos y minerales. Mientras que la yema tiene un 50% agua y un 50% grasa con un m\u00ednimo de prote\u00edna.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-8c71b5f elementor-widget elementor-widget-heading\" data-id=\"8c71b5f\" data-element_type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h2 class=\"elementor-heading-title elementor-size-default\">\u00bfC\u00f3mo comprar huevos?<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-61c4f57 elementor-widget elementor-widget-text-editor\" data-id=\"61c4f57\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>A la hora de elegir el mejor huevo lo tenemos super f\u00e1cil, todos los huevos est\u00e1n marcados con un c\u00f3digo que nos indica la forma en la que las gallinas han sido criadas y alimentadas, as\u00ed que basta con que nos aprendamos un par de c\u00f3digos para saber cuales elegir en el supermercado.<\/p><p>0 = las gallinas viven en libertad y son alimentadas en base a piensos ecol\u00f3gicos<\/p><p>1 = las gallinas son camperas, viven en libertad y son alimentadas con pienso<\/p><p>2 = las gallinas son criadas en naves, colocadas horizontalmente<\/p><p>3= las gallinas son criadas en jaulas verticales<\/p><p>No os dej\u00e9is enga\u00f1ar por lo que pongan en la caja, los claims ni la publicidad, no os fi\u00e9is del \u00abcriado en granja\u00bb, s\u00f3lo el c\u00f3digo num\u00e9rico nos garantiza que esas gallinas han sido criadas con respeto.<\/p><p>Un dato curioso para aquellos que buscan huevos ecol\u00f3gicos de tama\u00f1o XL, es que no los encontrar\u00e1n, no existen. Para que una gallina de huevos tan grandes, deben est\u00e1n sometidas a una serie de barbaries, d\u00edas de ayuno y a oscuras, provoc\u00e1ndoles tal estr\u00e9s que hace que muden todas sus plumas y pongan huevos tan grandes como respuesta al peligro que est\u00e1n sufriendo. Quien ha probado huevos reci\u00e9n puestos por la gallina sabe a lo que me refiero.<\/p><p>Un huevo feliz y fresco se caracteriza por tener una clara m\u00e1s compacta, esencial para la elaboraci\u00f3n de unos buenos huevos poch\u00e8, y una yema m\u00e1s unida que consigue quedarse en el centro de la clara. El color tambi\u00e9n es diferente, la clara tiene un tono menos transparente y al cuajarse es m\u00e1s gordita, y la yema es m\u00e1s amarilla brillante tirando a anaranjada. Si hablamos del sabor, pues que os voy a decir, no hace falta ni salpimentarlo ni condimentarlo, el huevo eco y fresco tiene un sabor a eso a fresco y m\u00e1s intenso.<\/p><p>Por norma general los huevos tienen una fecha de caducidad de 21 d\u00edas, por lo que podemos hacer c\u00e1lculos para saber si es fresco o no. Aunque un truco sencillo y divertido de hacer con ni\u00f1os es comprobar si el huevo flota o no en agua salada. Si el huevo se hunde es que es fresqu\u00edsimo, si en cambio flota es que es viejo.<\/p><p>Otra forma de saber si es fresco es cuando abrimos el huevo crudo por la mitad, una de las partes del huevo tiene una c\u00e1mara (como una burbuja) situada en una de las esquinas, cuanto mayor es esta c\u00e1mara m\u00e1s fresco es el huevo.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-fe06862 elementor-widget elementor-widget-heading\" data-id=\"fe06862\" data-element_type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h2 class=\"elementor-heading-title elementor-size-default\">Huevo y la higiene alimentaria<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-fd6a404 elementor-widget elementor-widget-text-editor\" data-id=\"fd6a404\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>A la hora de manipular un huevo es importante hacerlo con las manos bien limpias y sobre una superficie limpia.<\/p><p>Esto es algo que aprend\u00ed bien en mis d\u00edas trabajando en el hospital, nos lav\u00e1bamos las manos, forr\u00e1bamos la mesa con film transparente y nos volv\u00edamos a lavar las manos antes de manipular los huevos, para evitar as\u00ed cualquier tipo de contaminaci\u00f3n. Si ten\u00edamos que separar la clara de la yema lo hac\u00edamos directamente con las manos, pues las c\u00e1scaras pueden contener virus, hongos o bacterias que se transmitir\u00edan al huevo (esto hacerlo si o si, si os lo vais a comer crudo). Es muy sencillo, con las manos bien limpias, tienes que cascar y abrir el huevo sobre tu palma de la mano, dejando caer la clara entre los dedos, sobre un bol que hayas preparado y luego pones la yema en otro recipiente diferente.<\/p><p>Es importante que consumamos la clara bien cocinada y cuajada ya que as\u00ed desnaturalizamos las prote\u00ednas, permitiendo una mejor absorci\u00f3n de las vitaminas del grupo B. Mientras que la yema es mejor si la consumimos entera y cruda, evitando as\u00ed la oxidaci\u00f3n del colesterol que se produce si se bate o se cocina, por no decir que es mucho mas f\u00e1cil digerir una yema cruda que cocinada.<\/p><p>De ah\u00ed que el huevo pasado por agua o huevo poch\u00e9 sean las formas m\u00e1s saludables de cocer un huevo y la peor el huevo cocido durante m\u00e1s de diez minutos o el huevo frito (este \u00faltimo debido a la cantidad de aceite).<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-6600875 elementor-widget elementor-widget-heading\" data-id=\"6600875\" data-element_type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h2 class=\"elementor-heading-title elementor-size-default\">Formas de preparar y cocinar los huevos<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-9ab2463 elementor-widget elementor-widget-text-editor\" data-id=\"9ab2463\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>En cuanto a la forma de cocinarlo, ya hemos comentado que hay casi que miles, os dejo un resumen de las m\u00e1s utilizadas y saludables:<\/p><ul><li><strong>Pasado por agua<\/strong>, huevos cocidos con su c\u00e1scara en agua hirviendo durante unos 3-4 minutos, la clara se cuajar\u00e1 y la yema quedar\u00e1 l\u00edquida.<\/li><li><strong>Cocidos<\/strong>, seguir el mismo procedimiento que el anterior pero dejad cocer unos 7 minutos en total, la clara estar\u00e1 cuajada y la yema estar\u00e1 hecha pero con un toque crudo en el centro. Se ve muy claramente la diferencia de cuando los cueces durante 10 minutos o m\u00e1s que la yema se pone dura dura cambiando totalmente su textura y color.<\/li><li><strong>Escalfados o poch\u00e9<\/strong>, en un cazo con agua hirviendo sobre fuego muy lento, con un poquito de vinagre y sal, se a\u00f1ade con cuidado un huevo que habremos roto en un bol.\u00a0 El vinagre evitar\u00e1 que la clara se disperse y si queremos que envuelva mejor el huevo, podemos dar vueltas con una cuchara al agua mientras a\u00f1adimos el huevo o bien con una espumadera ir envolvi\u00e9ndo la yema.\u00a0Se deja cocer unos minutos hasta que la clara se haya cuajado pero la yema contin\u00faa cruda.<\/li><li><strong>Huevos cocotte<\/strong>, se elaboran dentro de un recipiente de cer\u00e1mica, previamente untado con un poco de aceite y normalmente junto con otros ingredientes. Se hacen en el horno al ba\u00f1o Mar\u00eda (metemos la cocotte en un recipiente con agua) durante 2-3 minutos.<\/li><li><strong>A la sart\u00e9n o a la plancha<\/strong>, es como hacer un huevo frito, pero utilizando solo unas gotitas de aceite. Calienta una sart\u00e9n, a\u00f1ade unas gotas de aceite y el huevo, deja hasta que se cuaje la clara y la yema est\u00e9 cruda.<\/li><li><strong>Revueltos<\/strong>, se bate el huevo y luego es cuajado a baja temperatura en una sart\u00e9n con un poco de aceite, removiendo ligeramente para que quede una textura cremosa.<\/li><li><strong>Tortilla<\/strong>, batimos el huevo en un bol y luego se hace en una sart\u00e9n ligeramente caliente, podemos darle forma de media luna, volteando con una esp\u00e1tula la mitad cuando est\u00e9 la base cuajada. o bien, podemos ir enroll\u00e1ndola d\u00e1ndole forma rectangular.<\/li><\/ul>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-d42e809 elementor-widget elementor-widget-heading\"
