Son famosas por sus propiedades antioxidantes, su funci\u00f3n hormonal y sus coenzimas (ayudan a las enzimas en su funci\u00f3n catalizadora, cambian la velocidad de reacci\u00f3n).<\/p>\n<h2>Vitaminas y sus colores<\/h2>\n<p>Las principales fuentes de vitaminas son las frutas y verduras, un dato curioso es que el color de las frutas y verduras viene determinado por la prevalencia de alguna vitamina, de ah\u00ed que siempre se recomiende comer el arco iris, pues as\u00ed te aseguras la ingesta de una gran variedad de vitaminas.<\/p>\n<p><strong>Rojo<\/strong>\u00a0Act\u00faa como antioxidante por su contenido de vitamina C y betacaroteno. . Las fresas, frambuesas, cerezas, ar\u00e1ndanos, pimientos rojos, los r\u00e1banos o los tomates.<\/p>\n<p><strong>Naranja y amarillo<\/strong>\u00a0Refuerza el sistema inmunol\u00f3gico y disminuye la presi\u00f3n arterial. Naranjas, mandarinas, limas, lim\u00f3n, albaricoques, <a href=\"https:\/\/healthyforkful.com\/es\/polos-melocoton-jengibre\/\">melocotones<\/a>, zanahorias, papayas o incluso los pimientos amarillos. Todos son una fuente rica en vitamina A y C.<\/p>\n<p><strong>Verde<\/strong>\u00a0ricas en \u00e1cido f\u00f3lico (B9), vitamina K, hierro y magnesio que van geniales para fortalecer el sistema inmunol\u00f3gico y mantienen la piel y el cabello saludables. Todas las verduras de hoja verde, el <a href=\"https:\/\/healthyforkful.com\/es\/broccoli-beef-dinner\/\">br\u00f3coli<\/a>, pepino, esp\u00e1rragos, alcachofas, pimiento verde, kiwi, uvas, <a href=\"https:\/\/healthyforkful.com\/es\/hummus-aguacate\/\">aguacate<\/a>&#8230;<\/p>\n<p><strong>Azul-Morado<\/strong>\u00a0Los polifenoles (un fitonutriente) que se encuentran en las verduras y frutas moradas ayudan a prevenir el envejecimiento, y protegen el funcionamiento de la memoria y el tracto urinario. Col lombarda, <a href=\"https:\/\/healthyforkful.com\/es\/lasana-de-berenjena-y-lentejas-vegana-sin-gluten-y-deliciosa\/\">berenjena<\/a>, higos, pasas, ar\u00e1ndanos y ciruelas no deben faltar en tu dieta.<\/p>\n<p>Ahora bien, hay que tener en cuenta que las vitaminas son susceptibles a manipulaciones, y la cantidad de vitaminas se ven reducidas cuando se someten a calor, aire y luz.Puede darse un traspaso de vitaminas del alimento hacia el medio de cocci\u00f3n, es decir que se pasan al agua cuando se hierven o al aceite cuando se salt\u00e9an.<\/p>\n<p>De aqu\u00ed que una de las preguntas que m\u00e1s recibo durante las clases de cocina que doy es &#8216;\u00bfc\u00f3mo preparo las verduras y frutas para conservar mejor las vitaminas?&#8217;<\/p>\n<h2>C\u00f3mo conservar las vitaminas<\/h2>\n<p>A pesar de que unas vitaminas resisten m\u00e1s que otras (las menos resistentes son la vitamina C y la B1), existen algunos trucos que hacen minimicemos las p\u00e9rdidas de vitaminas:<\/p>\n<ul>\n<li>Teniendo en cuenta que cada d\u00eda se pierde aproximadamente un tercio del contenido vitam\u00ednico, hay que consumir las frutas y verduras frescas, casi casi reci\u00e9n cogidas del campo.<\/li>\n<li>Pelar y cortarlas justo antes de su consumo o preparaci\u00f3n.<\/li>\n<li>No dejar en remojo las verduras.<\/li>\n<li>Cortarlas en trozos m\u00e1s grandes, as\u00ed habr\u00e1 menos superficie en contacto con el aire.<\/li>\n<li>Prepararlas al vapor o cocerlas con poca cantidad de agua y tapadas.<\/li>\n<li>A\u00f1adir un poquito de sal al agua de cocci\u00f3n.<\/li>\n<li>Cocer las verduras al dente, cuando cocemos en abundante agua durante veinte minutos, la vitamina C se destruye a la mitad.<\/li>\n<li>Reaprovechar el agua de cocci\u00f3n para preparar otros platos.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<!-- AddThis Advanced Settings generic via filter on the_content --><!-- AddThis Share Buttons generic via filter on the_content -->","protected":false},"excerpt":{"rendered":"<p>No es nada nuevo si os digo que las vitaminas son important\u00edsimas, ayudan a regular muchos procesos del organismo.
