Los pepinos est\u00e1n compuestos de aproximadamente 96% de agua, \u00a1es una hortaliza super hidratante! Los pepinos no solo tienen un sabor ligero y refrescante, sino que contienen antioxidantes y polifenoles \u00fanicos que han sido estudiados por sus efectos en la reducci\u00f3n de algunos tipos de c\u00e1ncer, enfermedades cardiovasculares, propiedades antimicrobianas e inflamaci\u00f3n.<\/p>\n\n\n\n<p>A mi adem\u00e1s me trae recuerdos de la infancia, veranos en el pueblo, con mi yayo cortando los extremos y poni\u00e9ndose uno en la frente, dec\u00eda que le refrescaba, luego lo cortaba longitudinalmente por la mitad, espolvoreaba una pizca de sal y nos lo com\u00edamos de postre. S\u00ed de postre :p<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Propiedades del pepino<\/h3>\n\n\n\n<p>Esta hortaliza&nbsp;<strong>aporta vitamina C,<\/strong>&nbsp;esencial para estimular el sistema inmunitario (250 gramos cubren el 13% de las necesidades diarias) y vitaminas del grupo B (250 gramos aportan al organismo el 18 % del \u00e1cido f\u00f3lico necesario y el 10% de la vitamina B5).<\/p>\n\n\n\n<p>Contiene asimismo\u00a0<strong>minerales como el potasio y oligoelementos<\/strong>\u00a0como el silicio, el molibdeno, el cobre y el manganeso, con un aporte que cubre el 5% de las necesidades diarias con 250 gramos.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Beneficios para la salud<\/h3>\n\n\n\n<p>El pepino resulta muy digestivo, depurativo, diur\u00e9tico, calmante y saludable para el coraz\u00f3n. Es rico en esteroles, sustancias que se concentran sobre todo en su piel y que ayudan a reducir el colesterol.<\/p>\n\n\n\n<p>Investigaciones realizadas en la Universidad Par\u00eds Sur-Par\u00eds XI y en el Instituto Gustave-Roussy (Francia) han demostrado que los lignanos denominados&nbsp;<strong>laricirresinol, pinorresinol y secoisolaricirresinol&nbsp;<\/strong>presentes en el pepino ejercen un efecto protector frente a enfermedades cardiovasculares y ante varios tipos de c\u00e1ncer, como los de mama, \u00fatero, ovario y pr\u00f3stata.<\/p>\n\n\n\n<p>A las<strong>&nbsp;propiedades contra el c\u00e1ncer&nbsp;<\/strong>tambi\u00e9n contribuyen las cucurbitacinas, unos terpenos que confieren a los pepinos su sabor amargo y que, seg\u00fan estudios realizados con animales, parecen bloquear las se\u00f1ales celulares que permiten la multiplicaci\u00f3n de las c\u00e9lulas cancer\u00edgenas.<\/p>\n\n\n\n<p>Otro ensayo realizado en laboratorio ha probado los<strong>&nbsp;efectos antioxidante y antiinflamatorio&nbsp;<\/strong>del extracto de pepino, que act\u00faa sobre enzimas inflamatorias como la ciclo-oxigenasa (COX2), y que son el objetivo de los medicamentos antiinflamatorios.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img data-recalc-dims=\"1\" decoding=\"async\" width=\"640\" height=\"426\" src=\"https:\/\/i0.wp.com\/healthyforkful.com\/wp-content\/uploads\/2019\/08\/cucumber-2424558_640.jpg?resize=640%2C426&#038;ssl=1\" alt=\"\" class=\"wp-image-4532\" srcset=\"https:\/\/i0.wp.com\/healthyforkful.com\/wp-content\/uploads\/2019\/08\/cucumber-2424558_640.jpg?w=640&amp;ssl=1 640w, https:\/\/i0.wp.com\/healthyforkful.com\/wp-content\/uploads\/2019\/08\/cucumber-2424558_640.jpg?resize=300%2C200&amp;ssl=1 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><\/figure>\n\n\n\n<h3 class=\"wp-block-heading\">PROTEGE EN GENERAL CONTRA LAS ENFERMEDADES<\/h3>\n\n\n\n<p><strong>Su vitamina C,<\/strong>&nbsp;de gran poder antioxidante, es esencial para&nbsp;<strong>estimular el sistema inmunitario.&nbsp;<\/strong>Tambi\u00e9n protege contra el da\u00f1o que los radicales libres causan en las membranas celulares.<\/p>\n\n\n\n<p><strong>Entre sus minerales destaca el silicio,<\/strong>&nbsp;esencial para la formaci\u00f3n del col\u00e1geno que forma parte de la estructura de la piel y de los tejidos blandos del cuerpo. El manganeso y el cobre son, por otra parte, cofactores necesarios para la s\u00edntesis de potentes compuestos antioxidantes. El cobre, adem\u00e1s, participa en la defensa inmunitaria y el molibdeno ayuda a prevenir la anemia y las caries.<\/p>\n\n\n\n<p>En cuanto a la&nbsp;<strong>presencia de potasio,&nbsp;<\/strong>al resultar diur\u00e9tico y depurativo favorece la regulaci\u00f3n de la tensi\u00f3n arterial. Tambi\u00e9n es importante para la generaci\u00f3n y transmisi\u00f3n del impulso nervioso. Se combina con buenas dosis de magnesio, de&nbsp;<strong>suave efecto tranquilizante y laxante.<\/strong><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Variedades<\/h3>\n\n\n\n<p>El&nbsp;<strong>pepino corto o pepinillo&nbsp;<\/strong>\u2013tambi\u00e9n llamado espa\u00f1ol\u2013 alcanza una longitud m\u00e1xima de 15 cent\u00edmetros y un peso medio de unos 125 gramos. Su piel es de color verde con rayas de color amarillo o blancuzco y se utiliza para consumo fresco y sobre todo en la elaboraci\u00f3n de encurtidos (entonces se denomina pepinillo).<\/p>\n\n\n\n<p>El pepino franc\u00e9s es m\u00e1s largo, puede llegar a los 20 cent\u00edmetros y su piel puede ser lisa o con espinas. <\/p>\n\n\n\n<p>El holand\u00e9s se hace a\u00fan m\u00e1s largo (hasta 25 cm, aunque los ejemplares extraordinarios pueden llegar a 60 cm de longitud y 10 cm de di\u00e1metro) y su piel est\u00e1 m\u00e1s o menos surcada. <\/p>\n\n\n\n<p>En Oriente se cultivan variedades minoritarias, como algunas de piel amarilla y otras de pulpa verde o con forma de globo.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">C\u00f3mo comprarlo<\/h3>\n\n\n\n<p>La naturaleza es sabia y nos aporta el pepino en verano, los meses de m\u00e1s calor, ayud\u00e1ndonos a hidratarnos y refrescarnos.\u00a0<\/p>\n\n\n\n<p>Elegid los m\u00e1s crujientes y con un tono verde oscuro, evitando con manchas amarillentas. Los m\u00e1s grandes pueden contener pepitas duras y suelen ser m\u00e1s amargos.<\/p>\n\n\n\n<p>Dentro de cada variedad, es preferible escoger aquellos ejemplares que tengan un tama\u00f1o medio y consistencia firme. Los pepinos muy grandes suelen contener pepitas ya duras y resultan algo m\u00e1s amargos que los peque\u00f1os.  Para quitarle ese toque amargo, lo mejor es retirar la piel, y si esto no fuera suficiente, qu\u00edtale las semillas y d\u00e9jalo en remojo con agua fr\u00eda. <\/p>\n\n\n\n<p>Conviene conservarlos en la parte menos fr\u00eda de la nevera y nunca congelarlos, porque se ablandan.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">El pepino en la cocina<\/h3>\n\n\n\n<p>\u00bfLo pasamos a la pr\u00e1ctica\ud83d\udc69\ud83c\udffb\u200d\ud83c\udf73? <\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Combina divinamente con l\u00e1cteos, con cacahuete, alcaparras o eneldo.<\/li><li>Tambi\u00e9n va super bien con menta y l\u00e1cteos, de ah\u00ed el tan popular <strong>taztiki<\/strong>, salsa griega-turca, preparada a base de pepino, menta, ajo, lim\u00f3n, aceite de oliva y yogur, se sirve bien fr\u00eda en ensaladas o con pan de pita.<\/li><li>Es ingrediente esencial de nuestro tradicional <strong>gazpacho<\/strong>.
