Como la c\u00farcuma es uno de los ingredientes estrella en mi cocina vamos a explorar sobre esta joya de las especias. <\/p>\n\n\n\n<p>La c\u00farcuma se encuentra entre mis 5 especias principales sin las que no puedo vivir. Los beneficios para la salud son tan poderosos, pero a menudo se pasan por alto y se usan menos en la cultura occidental. Sin culpa de nuestra cultura, la c\u00farcuma simplemente no es predominante en nuestra regi\u00f3n o cocina. <\/p>\n\n\n\n<p>A lo largo de la historia, la c\u00farcuma se ha utilizado en multitud de cosas, desde un remedio curativo para una variedad de dolencias hasta un tinte textil. El perfil de sabor de la c\u00farcuma es terroso, c\u00e1lido, ligeramente picante y, a veces, un poco amargo. Tambi\u00e9n se le ha llamado \u00abazafr\u00e1n indio\u00bb debido a su color amarillo dorado intenso, que es similar al azafr\u00e1n (un rico color rojo intenso). \u00bfSab\u00edas que el rico color amarillo dorado de la c\u00farcuma se usa a menudo en mostazas est\u00e1ndar para \u00abcolorear\u00bb el amarillo mostaza? Tintes de comida natural = incre\u00edble.<\/p>\n\n\n\n<p>La c\u00farcuma es originaria del Sureste Asi\u00e1tico, donde su uso culinario tiene al menos veinticinco siglos. Sus efectos beneficiosos para la salud y para preservar los alimentos, junto a su color amarillo brillante que la vincula con el Sol, debieron de favorecer su empleo simb\u00f3lico y ceremonial.<\/p>\n\n\n\n<p>En la India la c\u00farcuma se considera un&nbsp;<strong>s\u00edmbolo de prosperidad&nbsp;<\/strong>y un purificador f\u00edsico y espiritual. Una mezcla de c\u00farcuma y agua de lima todav\u00eda se utiliza en los ritos de adoraci\u00f3n en numerosos templos.<\/p>\n\n\n\n<p>Asimismo, el ba\u00f1o nupcial incluye manchar a la novia con esa mezcla. Un hilo te\u00f1ido de amarillo con c\u00farcuma se considera de buen augurio y se lleva como pulsera.En la Polinesia, la c\u00farcuma se esparce sobre los hombros durante los bailes rituales para ahuyentar a los esp\u00edritus malignos. <\/p>\n\n\n\n<p>La c\u00farcuma de la India es una planta perenne, de un metro o poco m\u00e1s de alto, con las ra\u00edces tuberosas,&nbsp;<strong>rizomas cil\u00edndricos<\/strong>&nbsp;y hojas grandes, de forma el\u00edptica y color verde amarillento, con largos peciolos que parten directamente del suelo.<\/p>\n\n\n\n<p>Toda la mata del rizoma, que crece mejor en un clima c\u00e1lido y h\u00famedo, se levanta cuidadosamente para prevenir cualquier da\u00f1o, y los&nbsp;<strong>\u00abdedos\u00bb<\/strong>&nbsp;se cortan desde los rizomas m\u00e1s grandes.<\/p>\n\n\n\n<p>La c\u00farcuma es hervida o cocida al vapor y a continuaci\u00f3n se deja secar. La curcumina en el componente principal que se encuentra en la c\u00farcuma responsable de los beneficios medicinales\/propiedades. La&nbsp;curcumina<strong>&nbsp;<\/strong>es un poderoso antioxidante que reduce de manera considerable el da\u00f1o que los radicales libres hacen a las c\u00e9lulas y por tanto es \u00fatil para prevenir el c\u00e1ncer.<\/p>\n\n\n\n<p>Sus virtudes antiinflamatorias la convierten en una ayuda contra la <a rel=\"noreferrer noopener\" href=\"https:\/\/pubs.acs.org\/doi\/abs\/10.1021\/np050327j\" target=\"_blank\">artritis reumatoide<\/a>,  la <a rel=\"noreferrer noopener\" href=\"https:\/\/www.karger.com\/Article\/Pdf\/336720\" target=\"_blank\">enfermedad inflamatoria intestinal<\/a>, el s\u00edndrome de colon irritable o cualquier&nbsp;proceso inflamatorio. Ahora puedes ver (y leer los estudios) realizados sobre los poderosos beneficios de la c\u00farcuma\/curcumina.<\/p>\n\n\n\n<p>Como con la mayor\u00eda de los estudios, los compuestos activos y los componentes de los alimentos se estudian en grandes dosis, entonces, \u00bfc\u00f3mo hacemos que esto sea aplicable a la vida diaria? La mayor\u00eda de los estudios de investigaci\u00f3n usan entre 2 y 7 g de curcumina para probar, esto ser\u00eda una gran cantidad de c\u00farcuma (especialmente cuando la c\u00farcuma pura est\u00e1 compuesta por aproximadamente 3,14% en peso de curcumina). <\/p>\n\n\n\n<p>Es un alimento seguro, incluso en dosis altas. No es irritante ni alerg\u00e9nico. Sin embargo, en caso de trastorno de la ves\u00edcula biliar se recomienda no abusar y consultar con el m\u00e9dico. <\/p>\n\n\n\n<p>La c\u00farcuma puede tener una interacci\u00f3n con medicamentos anticogulantes\/antiplaquetarios, warfarina o incluso aspirina, lo que puede aumentar el riesgo de sangrado en algunas personas. La c\u00farcuma pertenece al grupo de hierbas que pueden interactuar con este tipo de medicamentos: ajo, ginseng, jengibre, sauce, tr\u00e9bol rojo, clavo y otros. Habla con tu m\u00e9dico si crees que esto puede afectar tu estilo de vida (\u00a1o si planeas tomar graaandes dosis de c\u00farcuma).<\/p>\n\n\n\n<p>Recomiendo su uso diario si lo deseas (y consultar con tu m\u00e9dico de confianza en caso de que est\u00e9s tomando ciertos medicamentos), pero nuevamente, entiendo que esta puede ser una nueva especia para usar en tu cocina, as\u00ed que \u00fasala como mejor te parezca.<br> &nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">En la cocina<\/h3>\n\n\n\n<p>Como comentaba anteriormente,<strong> los rizomas pueden consumirse frescos,&nbsp;<\/strong>pero lo habitual es que se cocinen de 30 a 45 minutos para luego secarlos al sol o en hornos industriales.<\/p>\n\n\n\n<p>Suele comercializarse molida, aunque es posible encontrar el rizoma entero y seco.<\/p>\n\n\n\n<p>Tiene un sabor ligeramente dulce, con toques de madera sobre un fondo picante muy leve y ligeramente amargo.<\/p>\n\n\n\n<p>Como coment\u00e9 al principio del art\u00edculo, puede ser divertido, sobre todo para los peques, terminar con las manos amarillentas, pero si no quieres que esto pase o si no quieres estropear tu mantel favorito, aseg\u00farate de usar guantes y tener mucho cuidado en su manipulaci\u00f3n. <\/p>\n\n\n\n<p>Se incluye en muchas<strong>&nbsp;mezclas de curry,<\/strong>&nbsp;a las que da su caracter\u00edstico color amarillo; en chutneys, mostazas suaves, salsas y encurtidos, aunque como m\u00e1s se utiliza es como colorante.<\/p>\n\n\n\n<p><strong>Trucos y consejos<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Hay que comprarla en peque\u00f1a cantidad y guardarla tapada y en un lugar seco.&nbsp;<\/li><li>Si se muele o se ralla, hacerlo justo antes de utilizarla.<\/li><li>En <a href=\"https:\/\/healthyforkful.com\/es\/batido-citricos-invierno\/\" target=\"_blank\" rel=\"noreferrer noopener\">smoothies<\/a>, solo agrega un poco de c\u00farcuma para obtener sus poderes antiinflamatorios.<\/li><li>Dale color a tus ma\u00f1anas a\u00f1adiendo una pizca a tu <a href=\"https:\/\/healthyforkful.com\/creamy-porridge\/\" target=\"_blank\" rel=\"noreferrer noopener\">porridge<\/a>.<\/li><li>Nada como un reconfortante <a href=\"https:\/\/healthyforkful.com\/es\/curcuma-latte\/\" target=\"_blank\" rel=\"noreferrer noopener\">c\u00farcuma latte<\/a> para entrar en calor en esos d\u00edas de intenso fr\u00edo.<\/li><li>Los frutos secos y las frutas, como la manzana, el mango y los c\u00edtricos, combinan bien con esta
