{"id":5016,"date":"2020-03-21T08:47:00","date_gmt":"2020-03-21T07:47:00","guid":{"rendered":"https:\/\/healthyforkful.com\/?p=5016"},"modified":"2020-04-10T08:56:41","modified_gmt":"2020-04-10T06:56:41","slug":"aprovechar-las-sobras-de-la-nevera","status":"publish","type":"post","link":"https:\/\/healthyforkful.com\/es\/aprovechar-las-sobras-de-la-nevera\/","title":{"rendered":"C\u00f3mo aprovechar las sobras de la nevera"},"content":{"rendered":"\n<p>Algunas de las preguntas m\u00e1s comunes que suelen hacerme como chef son: \u00bfQu\u00e9 hago con lo que me sobra de______? y \u00bfC\u00f3mo uso _______?<\/p>\n\n\n\n<p>Despu\u00e9s de muchos a\u00f1os trabajando en el\nmundo de la restauraci\u00f3n y viendo de buena mano las grandes cantidades de\ncomida que se desperdiciaba, me propuse si o si, maximizar la eficiencia y\neficacia de todo lo que entraba en la cocina, y as\u00ed adem\u00e1s reduc\u00eda los costes,\npor lo que mis jefes encantados. <\/p>\n\n\n\n<p>Y es que al final todo alimento tiene un\nprop\u00f3sito y una forma de readaptarse, mi lema es \u201cno desperdicies\u2026 crea\u201d<\/p>\n\n\n\n<p>Rellena el espacio en blanco: cebollas,\nlimones, especias ex\u00f3ticos, pimientos a medias, quinua, cebada, el tronco del\nbr\u00f3coli, arroz, pasta: la lista sigue y sigue. Mezcla bien y d\u00e9jalo reposar en la nevera toda la\nnoche, s\u00edrvelo con m\u00e1s leche o bebida vegetal o yogur natural y unas nueces\ntroceadas. Voil\u00e0 el sabor de tu tarta de zanahoria preferida en un delicioso\nbol de desayuno!<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Cocina las hojas de lechuga.<\/h4>\n\n\n\n<p>Si el cogollo o la lechuga iceberg que\ntienes en la nevera comienza a ponerse blanda, salt\u00e9ala con un poco de aceite,\najo y salsa de soja para un r\u00e1pido acompa\u00f1ante inspirado en la cocina asi\u00e1tica.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Tallos de la kale o tronco de coliflor y br\u00f3coli<\/h4>\n\n\n\n<p>Los tallos de la kale tendr\u00e1s que\nblanquearlos primero para ablandar, que sean m\u00e1s tiernos y quitarles el toque\namargo que tienen. Esto se hace hirvi\u00e9ndolos en agua durante 30 segundos o un\nminutos y luego enfri\u00e1ndolos con hielo o agua fr\u00eda.<\/p>\n\n\n\n<p>Una vez los tienes puedes hacerlos en\nescabeche con vinagre, miel y sal y dejarlos reposar. Cuando est\u00e9n s\u00faper blandas, trit\u00faralo todo y\nya tienes tu compota lista para disfrutar con yogur, tu porridge de por las\nma\u00f1anas o directamente en una tostada con un poco de crema de cacahuete.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Pl\u00e1tanos negros<\/h4>\n\n\n\n<p>Tan pronto como comiences a ver que al\npl\u00e1tano le invaden esas manchas negras caracter\u00edsticas, p\u00e9lalo y cong\u00e9lalo.\nPodr\u00e1s utilizarlo en batidos, masa de pancakes o un delicioso bizcocho de\npl\u00e1tano.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Una deliciosa salsa verde<\/h4>\n\n\n\n<p>Recopila las hierbas frescas que quedan\nsueltas por la nevera y crea una deliciosa salsa verde.&nbsp; Tritura un gran manojo de hierbas mixtas\n(como albahaca, cilantro, ceboll\u00edn, estrag\u00f3n, menta o perejil) con el zumo de 1\nlim\u00f3n, 2 cucharaditas de alcaparras y 3 cucharadas de aceite de oliva. Sazonar\ny guarda en la nevera hasta que vayas a utilizarla. Queda particularmente bien\ncon pescado, pero tambi\u00e9n con verduras o incluso sobre una pizza.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Tortillas o pan de pitta rancios<\/h4>\n\n\n\n<p>Trocea las tortillas o el pan de pita en\ntri\u00e1ngulos, col\u00f3calas en una bandeja de horno y roc\u00eda con un poco de aceite de\noliva y una pizca de sal marina. Asa hasta que se dore en los bordes. Come con\nuna ensalada, hummus o cualquier otro pat\u00e9 vegetal.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Ramas de apio sobrantes<\/h4>\n\n\n\n<p>Se usa en un mont\u00f3n de salteados\nasi\u00e1ticos pues se cocina bastante r\u00e1pido y mantiene su toque crujiente.\nLam\u00ednalo finamente y salt\u00e9alo con pollo, tofu o ternera. Otra forma original de\nutilizarlo es hacerlos encurtidos, con vinagre, miel y un poquito de sal,\nquedan deliciosos para acompa\u00f1ar tablas de aperitivos con pat\u00e9s vegetales,\nquesos y dem\u00e1s.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Medios cartones de nata o crema de coco<\/h4>\n\n\n\n<p>Es normal que una receta te pida por solo\n100ml de nata o un par de cucharadas\u2026 Para no desperdiciar el resto, a\u00f1\u00e1dela a\ntu vinagreta y a\u00f1ade un toque m\u00e1s robusto a tu ensalada. Vi\u00e9rtela en tu caf\u00e9 o\nporridge darles una textura m\u00e1s sedosa. O b\u00e1tela con tus huevos y prep\u00e1rate la\nm\u00e1s cremosa tortillas o huevos revueltos que hayas probado nunca. Y por qu\u00e9 no,\na\u00f1\u00e1dela a tus platos de pasta para darle un toque m\u00e1s lujoso. Algunas un tanto originales ser\u00edan:<\/p>\n\n\n\n<p>A\u00f1adir un poco de leche, o esa nata o\ncrema de coco que tambi\u00e9n tenemos en la nevera. Espolvorear canela, cardamomo y\npistachos troceadas y tendr\u00e1s un arroz con leche al m\u00e1s puro estilo indio.<\/p>\n\n\n\n<p>O preparar unos deliciosos rolls. Aunque\nnormalmente hacemos sushi o rollitos con arroz de sushi tradicional, \u00bfpor qu\u00e9\nno hacer deliciosos y sanos snacks o aperitivos envolviendo los restos de arroz\nintegral con otras verduras en l\u00e1minas de nori?<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Tah\u00edn<\/h4>\n\n\n\n<p>Es uno de&nbsp;\nesos ingredientes que se suelen perder en nuestra nevera. Pues bien,\nqu\u00edtale el polvo y aprov\u00e9chalo para preparar un r\u00e1pido ali\u00f1o cremoso y sedoso.\nA\u00f1\u00e1delo a tu granola antes de hornear. A tus smoothies les da un plus de\nvitaminas y minerales. Y queda exquisito en galletas o brownies pues tiene el\npoder de elevar el sabor de estos.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Condimentos<\/h4>\n\n\n\n<p>Tarros de mostaza, miso, soja, curry,\nmayonesa, tabasco y otras salsas suelen ocupar gran parte del espacio de\nnuestra nevera. As\u00ed que vamos darles vida y us\u00e9moslos m\u00e1s a menudo.<\/p>\n\n\n\n<p>A\u00f1ade los restos de uno de estos\ncondimentos (pr\u00e1cticamente cualquier ir\u00e1 bien) a yogur, queso cremoso o nata\nagria junto con un chorrito de lim\u00f3n o lima y tendr\u00e1s una salsa de aperitivo\nexquisita. El curry va especialmente bien con ensaladas de at\u00fan o huevo. Util\u00edzalos\npara preparar marinados para el tofu, la carne o el pescado. O para potenciar\nel sabor de tus s\u00e1ndwiches.
