La raz\u00f3n no la tengo muy segura. No se si ser\u00eda porque su digesti\u00f3n es m\u00e1s pesada, porque cre\u00edamos que aportan m\u00e1s calor\u00edas o simplemente porque mi madre ten\u00eda divididas las comidas: pasta, legumbres, potajes y carnes para comer y pescados y verduras para cenar.<\/p>\n\n\n\n<p>Hace tiempo que he introducido las legumbres en las cenas. Fue un h\u00e1bito que tuve que implementar a conciencia. Porque me di cuenta que con este ritmo de vida y dem\u00e1s, com\u00eda menos en casa y pocas veces me organizaba con antelaci\u00f3n. Transcurriendo meses sin comer legumbres&#8230;<\/p>\n\n\n\n<p>Y como ya sab\u00e9is yo no soy mucho de platos tradicionales, as\u00ed que las legumbres no las como en el t\u00edpico estofado si no que innovo y las utilizo en muchos otros platos. Ensaladas, burgers, falafels, pat\u00e9s&#8230; <\/p>\n\n\n\n<p>Hoy te traigo este plato sabroso de lentejas con champi\u00f1ones, espinacas y un huevo poch\u00e9\u00a0como guinda.<\/p>\n\n\n\n<p>Las lentejas son ricas en fibra lo que nos ayudara a equilibrar los niveles de az\u00facar en la sangre. Sabido es que las espinacas aportan muchas vitaminas y minerales. Pero es que adem\u00e1s contienen luteina, un antioxidante que ayuda a protegernos contra enfermedades y prevenirnos de problemas de visi\u00f3n de la piel y el envejecimiento. <\/p>\n\n\n\n<p>\u00bfSab\u00edas que los champi\u00f1ones tienen prote\u00ednas? Si yo tambi\u00e9n me sorprend\u00ed cuando lo estudi\u00e9. Pero bueno, solo tenerlo como dato curioso, porque no contienen las suficientes como para considerarlas fuentes de prote\u00ednas. Por eso a\u00f1ado el huevo que esto s\u00ed que es una fuente de prote\u00edna completa y  nos permitir\u00e1 obtener todas las necesarias para mantener nuestros m\u00fasculos Pon el caldo de verdura en una cacerola con las lentejas y pon a hervir. Vierte la mitad del vino blanco y con una cuchara de madera raspa los trozos pegados en la sart\u00e9n, estos  son los que dar\u00e1n un sabor m\u00e1s intenso a nuestro plato. Reduce el vino hasta que se haya evaporado.<\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t<li class=\"wprm-recipe-instruction\">\n\t\t\t\t\t\t\t\t\t\t<div class=\"wprm-recipe-instruction-text\">Reduce el fuego a medio-bajo y a\u00f1ade el resto del vino. Deja hervir un par de minutos y entonces a\u00f1ade las lentejas y las espinacas. Cubre la sart\u00e9n y deja cocer 5 minutos m\u00e1s.<\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t<li class=\"wprm-recipe-instruction\">\n\t\t\t\t\t\t\t\t\t\t<div class=\"wprm-recipe-instruction-text\">Mientras tanto prepara los huevos. En un cazo pon agua y un chorrito de vinagre a fuego alto, cuando est\u00e9 a punto de hervir, cuando v\u00e9as que las burbujas ya empiezan a flotar, baja el fuego a medio. Casca un huevo en un bol y a\u00f1adeselo al agua, deja hacer durante unos 4-5 minutos, depende de como quer\u00e1is la yema hecha. Con ayuda de una espumadera o una cuchara con agujeros y con sumo cuidado saca el huevo y disp\u00f3n encima de las lentejas cuando est\u00e1s est\u00e9n listas.
