Encargaba un salm\u00f3n entero y lo marinaba durante unos d\u00edas con sal y eneldo. Lo disfrut\u00e1bamos durante las fiestas. Bueno mejor dicho, lo disfrutaban, porque por aqu\u00e9l entonces a mi no me gustaba&#8230; <\/p>\n\n\n\n<p>Pero ahora ya s\u00ed que me gusta, y de hecho me encanta. Lo prefiero al salm\u00f3n ahumado, tiene un sabor m\u00e1s suave, m\u00e1s delicado. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\">\u00bfC\u00f3mo preparar salm\u00f3n marinado?<\/h2>\n\n\n\n<p>La verdad que solemos llamarlo salm\u00f3n marinado, pero en realidad es salm\u00f3n curado. <\/p>\n\n\n\n<p>El curado es una t\u00e9cnica muy antigua que se usaba para conservar carne o pescado, y alargar su durabilidad. <\/p>\n\n\n\n<p>La ciencia detr\u00e1s del curado en seco (salaz\u00f3n) es simple, mediante la curaci\u00f3n con sal, se consigue que el agua de las c\u00e9lulas extrae el agua de las c\u00e9lulas del producto, impidiendo que ciertos microorganismos puedan sobrevivir. El ingrediente clave es la paciencia, porque tienes que esperar unas cuantas horas para poderlo disfrutar.<\/p>\n\n\n\n<p>El salm\u00f3n curado cl\u00e1sico es con sal y eneldo, nada de l\u00edquido. Yo esta vez he querido darle un toque deluxe, m\u00e1s festivo y elegante, con un borde rosita super atractivo. <\/p>\n\n\n\n<p>\u00bfC\u00f3mo lo he conseguido? Pues curando el salm\u00f3n adem\u00e1s con remolacha!! S\u00ed la remolacha es uno de los mejores colorantes rosas naturales que puedes utilizar. <\/p>\n\n\n\n<p>Si tienes miedo que la remolacha cambie o altere el sabor del salm\u00f3n, o no eres gran class=\"wprm-recipe-instruction-text\"><p>Coloca en un bol grande la pimienta, la remolacha, el eneldo, la sal y el az\u00facar y mezcla bien. Extiende la mitad de la mezcla en la base de una fuente. Pon el lomo de salm\u00f3n encima y cubre con el resto de la mezcla de remolacha. Tapa con papel vegetal, pon una bandeja o una tabla de cortar encima y pon peso, unas 2-3 latas de tomates, legumbres o bricks de leche. Refrigera durante 4 -8 horas.<\/p><p>Retira el salm\u00f3n de la mezcla de remolacha, quitando cualquier resto de sal con una brocha de reposter\u00eda. Con un cuchillo afilado, corta en l\u00e1minas finas.<\/p><p>Sirve con yogur griego, unas hojas de eneldo y unas rebanadas de pan de masa madre. <\/p><\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t<\/ol>\n\t\t<\/div>\n\t\t\t<\/div>\n\t\t\t\t<div class=\"wprm-recipe-notes-container\">\n\t\t<div class=\"wprm-recipe-header wprm-color-header\">Notas de la Receta<\/div>\n\t\t<p>A mi me gusta curarlo 4-8 horas porque queda con una textura espectacular, super sedoso, tanto que se deshace en la boca! De esta forma aguanta bien tapado en la nevera durante 3 d\u00edas.<\/p>\n<p>Si te gusta una textura m\u00e1s consistente, c\u00faralo durante 24 horas. Te aguantar\u00e1 hasta 5 d\u00edas en la nevera bien tapado.<\/p>\n<p>Puedes tambi\u00e9n congelarlo en l\u00e1minas para usos futuros.
