Es una pasta elaborada con soja, que se fermenta con sal y Aspergillus oryzae, un hongo natural. Se puede agregar cebada, arroz o trigo sarraceno al proceso.<\/p>\n\n\n\n<p>Existen diferentes tipos de pasta de miso. En el mercado puedes encontrar miso blanco, miso rojo o miso oscuro. El color depende principalmente del tiempo de fermentaci\u00f3n. Cuanto m\u00e1s largo sea, m\u00e1s oscuro e intenso ser\u00e1 el sabor; mientras que un per\u00edodo de fermentaci\u00f3n m\u00e1s corto producir\u00e1 un miso m\u00e1s dulce y ligero.<\/p>\n\n\n\n<p>Debido a que el miso est\u00e1 hecho de soja, es una prote\u00edna completa que contiene todos los amino\u00e1cidos esenciales y lo convierte en una gran fuente de prote\u00ednas para vegetarianos y veganos. Pero si no puedes comer soja, no te preocupes, porque tambi\u00e9n hay otras opciones en el mercado elaboradas a base de alg\u00fan cereal.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Propiedades del miso<\/h2>\n\n\n\n<p>El miso ayuda a la digesti\u00f3n, restaura las bacterias intestinales beneficiosas, tiene un alto contenido de vitamina B y antioxidantes.<\/p>\n\n\n\n<p>La primera vez que prob\u00e9 sopa de miso fue, por supuesto, en un restaurante japon\u00e9s.
