La protagonista no es la gallina, si no la berenjena.<\/p>\n\n\n\n<p>S\u00ed la berenjena es la estrella de esta caponata italiana, un aperitivo cl\u00e1sico siciliano, pero el resto de ingredientes se pueden debatir.<\/p>\n\n\n\n<p>Caponata es un delicioso aperitivo, acompa\u00f1ante elaborado a base de verduras frescas veraniegas. Si quisieramos encontrar una similitud ser\u00eda con el pisto manchego o la sanfaina catalana, aunque tiene ciertas particularidades que hacen a la caponata \u00fanica.<\/p>\n\n\n\n<p>La primera de todas es que es tiene un sabor agridulce, este contraste de sabores es cl\u00e1sico en la cocina siciliana. Este contraste se debe al dulzor de las pasas y el agrio del vinagre.<\/p>\n\n\n\n<p>Como dec\u00eda la base de la caponata es la berenjena, una verdura veraniega que brilla especialmente en este plato. Las berenjenas son ricas en fibra soluble que favorece el buen estado de la flora bacteriana y ayuda a la eliminaci\u00f3n de las heces. Contiene tambi\u00e9n antioxidantes gracias a las antocianinas que le dan el color morado caracter\u00edstico. Ayuda a regular el colesterol y a mantener a raya la oxidaci\u00f3n celular. Adem\u00e1s la berenjena es muy digestiva y diur\u00e9tica y buena para el sistema nerviosos por su vitamina B6, B1 y magnesio.<\/p>\n\n\n\n<p>Adem\u00e1s de la berenjena en la caponata encontramos cebolla, apio, tomates frescos, alcaparras, aceitunas, pi\u00f1ones y pasas. Otras versiones incluyen pimiento o incluso pimiento rojo.<\/p>\n\n\n\n<p>La verdad que la receta caponata es muy sencilla y b\u00e1sicamente puedes hacerla con cualquier verdura que tengas en la
