Que si aperitivos, primer plato, segundo plato con acompa\u00f1amiento, postre y repostre. Y este ritual se repite tres veces en cuesti\u00f3n de 36 horas: en la cena de Nochebuena, comida de Navidad y comida de San Esteban, que nosotras somos muy de mimetizarnos con las tradiciones locales.<\/p>\n\n\n\n<p>La cuesti\u00f3n es que rendidas a lo inevitable, lo que nos quedaba era lavar nuestra conciencia con elaboraciones&nbsp;no demasiado pesantes y cocinar&nbsp;platos principales nutritivos, f\u00e1ciles y que en realidad sirvieran para cualquier \u00e9poca del a\u00f1o. Y en Nochebuena, nos decantamos por pescado. Esta vez salm\u00f3n.<\/p>\n\n\n\n<p>El salm\u00f3n es rico en omega-3, antiinflamatorio por excelencia. Este omega 3 son \u00e1cidos grasos esenciales que tenemos que ingerir con la dieta porque nuestro cuerpo no es capaz de producirlo. Existen diferentes tipos de omega 3, y var\u00edan entre otras cosas en funci\u00f3n de su capacidad de absorci\u00f3n. Los \u00e1cidos grasos del salm\u00f3n, o cualquier otro pescado azul, son de cadena larga EPA (eicosapentaenoico) y DHA (docosahexaenoico) \u00bfesto qu\u00e9 significa? Que son los m\u00e1s potentes pues son los que realmente utiliza nuestro organismo para fabricar sus propias sustancias antiinflamatorias.<\/p>\n\n\n\n<p>Pero no solo eso, el salm\u00f3n adem\u00e1s aporta prote\u00ednas, hierro, calcio, potasio, vitaminas del grupo B y otros nutrientes imprescindibles para nuestro cuerpo. El hinojo tiene la particularidad de regular el sistema digestivo, favoreciendo la digesti\u00f3n, cosa que nos va a ir genial para gestionar un poco mejor tanta comida. <\/p>\n\n\n\n<p>El resultado, un plato principal nutritivo, vistoso, sabroso \u00a1y f\u00e1cil de hacer! class=\"wprm-recipe-instruction-text\">Colocamos una de las colas del salm\u00f3n en una fuente de horno, con la carne hacia arriba, salpimentamos, espolvoreamos eneldo y cubrimos con las tiras de cebolla e hinojo a modo de cama.<\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t<li class=\"wprm-recipe-instruction\">\n\t\t\t\t\t\t\t\t\t\t<div class=\"wprm-recipe-instruction-text\">Salpimentamos el otro lomo (por la parte de la carne) y tapamos la cebolla y el hinojo.<\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t<li class=\"wprm-recipe-instruction\">\n\t\t\t\t\t\t\t\t\t\t<div class=\"wprm-recipe-instruction-text\">Procuramos que quede igualado en altura la especie de sandwich de salm\u00f3n.<\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t<li class=\"wprm-recipe-instruction\">\n\t\t\t\t\t\t\t\t\t\t<div class=\"wprm-recipe-instruction-text\">Con ayuda de la cuerda de cocinar atamos el salm\u00f3n. Si se caen trozos de cebolla e hinojo, no os preocup\u00e9is, cuando acab\u00e9is de atarlo las met\u00e9is por en medio de los lomos.<\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t<li class=\"wprm-recipe-instruction\">\n\t\t\t\t\t\t\t\t\t\t<div class=\"wprm-recipe-instruction-text\">Colocamos rodajas de lim\u00f3n finitas entre el cordel y el salm\u00f3n, a lo largo del lomo y espolvoreamos un poco de eneldo.<\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t<li class=\"wprm-recipe-instruction\">\n\t\t\t\t\t\t\t\t\t\t<div class=\"wprm-recipe-instruction-text\">Vertemos el vino blanco sobre la bandeja con el salm\u00f3n y metemos al horno durante 40 minutos aproximadamente.<\/div>\n\t\t\t\t\t\t\t\t\t\t\t\t\t\t<\/li>\n\t\t\t\t\t\t\t\t<li class=\"wprm-recipe-instruction\">\n\t\t\t\t\t\t\t\t\t\t<div class=\"wprm-recipe-instruction-text\">Mientras se hornea hacemos un preparado con la cebolla restante picada muy fina, semillas de cilantro (si no tenemos, podemos sustituirlas por cilantro en polvo o cilantro fresco picado), aceite, vinagre, sumo de lim\u00f3n, sal y pimienta.
