Cremosa, suave, con un toque \u00e1cido y dulce, vamos que est\u00e1 deliciosa!! <\/p>\n\n\n\n<p>Yo la como a cucharadas, pero con yogur de coco, con pancakes, sobre bizcochos cl\u00e1sicos o en tartaletas con ar\u00e1ndanos, frambuesas o fresas queda espectacular tambi\u00e9n \ud83e\udd24.<\/p>\n\n\n\n<p>Intentar hacer esta crema m\u00e1s nutritiva es un tanto dif\u00edcil ya que los limones de por si son muy \u00e1cidos, por lo que para contrarrestar hay que a\u00f1adirle si o si alg\u00fan edulcorante o ingrediente naturalmente dulce.<\/p>\n\n\n\n<p>La receta tradicional se hace con muuuucha cantidad de az\u00facar blanco, yo he probado con miel y eritritol, y quedan muy bien, pero ten en cuenta que sigue siendo \u201caz\u00facar\u201d. Mi siguiente prueba ser\u00e1 con d\u00e1tiles, aunque tengo miedo que altere mucho su sabor. <\/p>\n\n\n\n<p>Tambi\u00e9n he reducido la cantidad, para mi est\u00e1 bien, tengo un paladar que ya est\u00e1 acostumbrado a sabores m\u00e1s naturales y no le van cosas muy dulces, por lo que quiz\u00e1s para ti tengas que a\u00f1adirle un poco m\u00e1s. Es cuesti\u00f3n de ir probando hasta que encuentres el sabor de lim\u00f3n\/dulzor con el que te encuentras c\u00f3moda.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">\u00bfQu\u00e9 es el eritritol?<\/h2>\n\n\n\n<p>Para los que no lo conozc\u00e1is, el eritritol es un edulcorante, un polialcohol, poliol o de la familia de los alcoholes de az\u00facar. <\/p>\n\n\n\n<p>Se produce mediante un proceso natural de fermentaci\u00f3n de la glucosa que se extrae del almid\u00f3n del ma\u00edz o del trigo, y se fermenta por una levadura, Moniliella pollinis, entre otras. <\/p>\n\n\n\n<p>Se usa como endulzante y aditivo, puedes identificarlo por<strong> <\/strong>E-968.<\/p>\n\n\n\n<p>El eritritol se caracteriza porque:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Tiene menos calor\u00edas que el az\u00facar blanco.<\/li><li>Endulza un 30% menos que el az\u00facar, as\u00ed que es ligeramente menos intenso, y si quieres usarlo en lugar de az\u00facar, tendr\u00e1s que a\u00f1adir un poco m\u00e1s.<\/li><li>No provoca caries.<\/li><li>No eleva los niveles de az\u00facar en sangre, por lo que va bien para los diab\u00e9ticos.<\/li><li>Se absorbe r\u00e1pidamente y en un 90% en el intestino delgado, pasa a la sangre y es eliminado por la orina, es decir, no fermenta porque no llega al intestino grueso, y por tanto no afecta mucho a la microbiota.<\/li><\/ul>\n\n\n\n<p>A pesar de estas ventajas, no es oro todo lo que reluce. No podemos excedernos y no se recomienda consumir m\u00e1s de 50 gramos por d\u00eda.<strong> Si se toma en exceso, puede provocar gases, malestar, n\u00e1useas, heces pastosas<\/strong>. Por lo que si hay tendencia a tener problemas intestinales, gases o hinchaz\u00f3n, el consumo de polioles puede empeorar la situaci\u00f3n.<\/p>\n\n\n\n<p>Personas con problemas intestinales debe evitar su consumo. De hecho, si tienes problemas para absorber estos polioles, acabas de descubrir que tienes una inflamaci\u00f3n en el intestino delgado que seguro querr\u00e1s resolver. Si necesitas ayuda, no duded en concertar una asesor\u00eda diet\u00e9tica escribiendo a <a rel=\"noreferrer noopener\" href=\"mailto:hola@mariallamas.com\" target=\"_blank\">hola@mariallamas.com<\/a><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Crema de lim\u00f3n (lemon curd)<\/h2>\n\n\n\n<p>3-4 limones<\/p>\n\n\n\n<p>100 gr miel cruda (100-120 gr de eritritol)<\/p>\n\n\n\n<p>3 yemas y 2 huevos enteros<\/p>\n\n\n\n<p>115 gr de mantequilla eco o 100 ml de aceite de coco o aceite de oliva suave<\/p>\n\n\n\n<p>Obt\u00e9n la ralladura de 3 limones y extrae 170ml de zumo (dependiendo del tama\u00f1o necesitar\u00e1s 3 o 4 limones. <\/p>\n\n\n\n<p>En un bol bate las yemas y los huevos enteros con la miel o eritritol. Incorpora la ralladura y zumo y bate bien. <\/p>\n\n\n\n<p>Pon el bol sobre un cazo con agua al fuego (al ba\u00f1o Mar\u00eda). Bate constantemente con unas varillas hasta que espese, unos 10 minutos. <\/p>\n\n\n\n<p>Una vez que haya espesado, retira del fuego y da unas vueltas para sacarle todo el huemo y que se enfr\u00ede un poco. D\u00e9jalo enfriar unos 15 minutos. <\/p>\n\n\n\n<p>A\u00f1ade la mantequilla poco a poco, dando vueltas constantemente para que se derrita y se incorpore resultando en una crema brillante. Dejar enfriar por completo y refrigerar. <\/p>\n\n\n\n<p>Se conserva una semana en la nevera.<\/p>\n\n\n\n<p>Nota: puedes hacerlo con naranjas o mandarinas, reduciendo ligeramente la cantidad de miel
