Algunas veces sub\u00edan, otras se quedaban planos, otras estaban huecos pero h\u00famedos por dentro. No era falta de t\u00e9cnica, era falta de <strong>comprender c\u00f3mo se comporta la pasta choux sin gluten<\/strong> y aceptar que no funciona igual que la tradicional.<\/p>\n\n\n\n<p>Con el tiempo, despu\u00e9s de muchas pruebas, entend\u00ed que la clave no est\u00e1 en copiar recetas con gluten, sino en <strong>formular una masa pensada desde cero<\/strong>, respetando digesti\u00f3n, inflamaci\u00f3n y estabilidad hormonal. En la <strong>masa choux sin gluten<\/strong> los errores m\u00e1s comunes son:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Exceso de humedad<\/li>\n\n\n\n<li>Harinas mal equilibradas<\/li>\n\n\n\n<li>Huevos a\u00f1adidos sin observar la textura<\/li>\n\n\n\n<li>Horneado insuficiente<\/li>\n<\/ul>\n\n\n\n<p>Por eso no copio recetas cl\u00e1sicas: adapto la t\u00e9cnica a ingredientes sin gluten reales y digestivos.<\/p>\n\n\n\n<p>La pasta choux cl\u00e1sica depende del gluten para crear estructura. Esta combinaci\u00f3n aporta elasticidad, cuerpo y ligereza sin recurrir a mezclas industriales.<\/p>\n\n\n\n<p>Cuando mezclo los ingredientes secos en un bol \u201480 g de almid\u00f3n de tapioca, 45 g de harina de arroz integral y 40 g de almid\u00f3n de patata\u2014 ya s\u00e9 que estoy creando una estructura estable que luego se comporta bien en el horno.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">La importancia del l\u00edquido y la grasa<\/h2>\n\n\n\n<p>Uno de los grandes errores que veo es usar solo agua. Yo siempre combino <strong>bebida de almendras o coco y agua<\/strong>, porque as\u00ed la masa queda m\u00e1s sedosa.<\/p>\n\n\n\n<p>En el cazo junto:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>la bebida vegetal<\/li>\n\n\n\n<li>el agua<\/li>\n\n\n\n<li>115 g de mantequilla eco o aceite de coco solidificado<\/li>\n\n\n\n<li>\u00bd cucharadita de glicina<\/li>\n\n\n\n<li>\u00bd cucharadita de sal<\/li>\n<\/ul>\n\n\n\n<p>Cuando empieza a hervir, a\u00f1ado <strong>los secos todos de golpe<\/strong> y remuevo sin parar. En uno o dos minutos la masa se despega de las paredes y se convierte en una bola compacta. Ese momento es crucial: <strong>en cuanto se forma la bola, retiro del fuego<\/strong>.<\/p>\n\n\n\n<p>Como chef enfocada en salud hormonal, este paso es importante: usar <strong>grasas estables<\/strong> y evitar picos de estr\u00e9s metab\u00f3lico mejora tanto la textura como la digesti\u00f3n posterior.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Glicina como edulcorante: por qu\u00e9 la utilizo en mis profiteroles sin gluten<\/h2>\n\n\n\n<p>Uno de los ingredientes que m\u00e1s llama la atenci\u00f3n en esta receta de <strong>profiteroles sin gluten<\/strong> es la <strong>glicina<\/strong>, y no es casualidad. Prefiero que queden un poco m\u00e1s secos por dentro antes que sacarlos pronto y que se hundan al enfriar.
